Yummy Gluten-Free Pizza Recipe 

One huge sacrifice of being a celiac or having a gluten intolerence is giving up pizza. This recipe should bring you back to the good ole days of eating delicious pizza. Make this gluten-free pizza recipe and live again.

Yeast Rising Thick Pizza Crust

Ingredients

  • 2 cups White Rice Flour 
  • 2 cups Tapioca Flour 
  • 2/3 cup Milk Powder (Non-Fat Dry) 
  • 3-1/2 tsp Xanthan Gum 
  • 1 tsp Sea Salt
  • 2 Tb Yeast, Active Dry 
  • 1 cup Warm Wate5 - 110 degrees F) 
  • 1 Tb Sugar 
  • 3 Tb Vegetable Shortening 
  • 1/2 cup Hot Water (120 degrees F) 
  • 4 large Egg White (room temperature

Pizza Sauce

1 can (8 oz.) tomato sauce

1/2 teaspoon dried oregano leaves

1/2 teaspoon dried basil leaves

1/2 teaspoon crushed dried rosemary

1/2 teaspoon fennel seeds

1/4 teaspoon garlic powder

1 to 2 teaspoons sugar, to taste

1/2 teaspoon salt

Toppings of your choice

 

Sauce: Combine all ingredients in small saucepan and bring to boil over medium heat. Reduce heat to low and simmer 15 minutes, while Pizza Crust is being assembled. Makes about 1 cup.

Directions
Preheat oven to 400°. Grease cookie sheet or round pizza pans, set aside.

In bowl of heavy-duty mixer, put flour, milk, xanthan gum and salt. Put yeast in 1 cup lukewarm water with sugar added. Melt shortening in 1/2 cup hot water. With the mixer on low, blend dry ingredients. Pour in hot water and shortening, blending to mix. Add egg whites, blend again, then add the yeast mixture. Beat on high speed for 4 minutes.

Spoon half the dough onto prepared pan. With your hand in a plastic bag, pat the dough out in a circle about 1/4 inch thick except at edges, which should be higher to contain sauce and fillings. Repeat with the second half of the dough. Spread immediately with sauce and favorite toppings. There is no need to let this rise, but by allowing 20 minutes of rise time, you will get an even thicker crust. Bake in 400° oven for 20 to 22 minutes.

Makes 2 -12 inch pizza crusts (10 slices each).
